There are a number of factors that influence this such as your medical history, what state you live in and which insurance carrier you have applied to. The insurance carrier may need to obtain a copy of your medical records from your doctor which will delay your application for several weeks. They may need an ink signature in order to get that process moving. Of course, each carrier has different underwriting processes too.
